Bea’s Mashed Potato Salad
Serves: 4
  • 1 pkg (4 oz/113.4 g) Idahoan® Baby Reds® Flavored Mashed Potatoes
  • 3 radishes, thinly sliced
  • 2 stalks celery, finely chopped
  • 1 hard-boiled egg, sliced
  • 1 dill pickle, finely chopped
  • 30 mL (2 tbsp) finely chopped red onion
  • 45 mL (3 tbsp) mayonnaise
  • 15 mL (1 tbsp) stone-ground mustard
  • 5 mL (1 tsp) yellow mustard
  • Salt and pepper
  • 1 mL (1/4 tsp) celery seed (optional)

  1. Prepare Baby Reds® Flavored Mashed Potatoes following package instructions; transfer to large bowl. Fold in radishes, celery, egg, pickle and red onion.
  2. In separate bowl, combine mayonnaise, stone ground mustard and yellow mustard; mix into mashed potato mixture. Season with salt and pepper to taste. Stir in celery seed (if using).
  3. Tip: For gluten-free lifestyles, note that some prepared mayonnaise contains gluten, so read the label carefully.
