Preheat oven to 400°F (200ºC). Prepare Baby Reds® Flavored Mashed Potatoes following package instructions.
Set cast iron skillet over medium heat; coat well with nonstick cooking spray. Scoop potatoes into 4 mounds in skillet. Top with green onions and cheese.
Cook for about 5 minutes or until crisp and set on the bottom. Transfer to oven; cook for 10 to 15 minutes or until cheese is melted.
Tip: Serve the potatoes on their own or as a side with meatloaf, steak or chicken. This recipe is delicious with any variety of Idahoan Mashed Potatoes – so experiment with different flavors and even different cheeses to find your favorite!
