Roasted Garlic and Parmesan Broccoli with Idahoan® Butter & Herb Mashed Potatoes

  • 1 pkg (113.4 g) Idahoan® Butter & Herb Mashed Potatoes
  • 1 head broccoli, cut into small florets (4 to 5 cups)
  • 30 mL (2 Tbsp) olive oil
  • 2 cloves garlic, minced
  • A pinch (1/4 tsp) each salt and pepper
  • Pinch red pepper flakes
  • 60 mL (1/4 cup) grated Parmesan cheese
  1. Preheat oven to 230°C (450°F). Prepare mashed potatoes according to package instructions. Keep warm.
  2. Meanwhile, toss together broccoli, oil, garlic, salt, pepper and red pepper flakes; toss with Parmesan. Arrange in single layer on parchment paper–lined baking sheet.
  3. Roast for 10 to 12 minutes or just until tender. Serve over mashed potatoes.
  4. Tip: To use the whole head of broccoli, peel and trim stem; chop into bite-size pieces and roast along with florets.
