Chicken and Pepper Fajita Stir-Fry with IdahoanĀ® Four Cheese Mashed Potatoes

Ingredients
1 pkg (4 oz) IdahoanĀ® Four Cheese Mashed Potatoes
30 mL (2 Tbsp) canola oil
454 g (1 lb ) boneless skinless chicken breast, sliced
1 onion, sliced
1 red pepper, sliced
1 orange pepper, sliced
2 cloves garlic, minced
5 mL (1 tsp) chili powder
2 mL (1/2 tsp) ground cumin
2 mL (1/2 tsp) salt and pepper
2 green onions, thinly sliced
Instructions
Prepare mashed potatoes according to package instructions. Keep warm.
Meanwhile, heat oil in large skillet set over medium-high heat; cook chicken for 3 to 5 minutes or until starting to brown.
Stir in onions, red and orange peppers, garlic, chili powder, cumin, salt and pepper. Cook, stirring, for 3 to 5 minutes or until chicken is cooked through and vegetables are tender-crisp. Serve over mashed potatoes. Sprinkle with green onions.
