Roasted Garlic and Parmesan Broccoli with Idahoan® Butter & Herb Mashed Potatoes

Ingredients
- 1 pkg (113.4 g) Idahoan® Butter & Herb Mashed Potatoes
- 1 head broccoli, cut into small florets (4 to 5 cups)
- 30 mL (2 Tbsp) olive oil
- 2 cloves garlic, minced
- A pinch (1/4 tsp) each salt and pepper
- Pinch red pepper flakes
- 60 mL (1/4 cup) grated Parmesan cheese
Instructions
- Preheat oven to 230°C (450°F). Prepare mashed potatoes according to package instructions. Keep warm.
- Meanwhile, toss together broccoli, oil, garlic, salt, pepper and red pepper flakes; toss with Parmesan. Arrange in single layer on parchment paper–lined baking sheet.
- Roast for 10 to 12 minutes or just until tender. Serve over mashed potatoes.
- Tip: To use the whole head of broccoli, peel and trim stem; chop into bite-size pieces and roast along with florets.
