This recipe for Smashed Potatoes offers an interesting new twist on mashed potatoes. They also make tasty work of leftovers and those crispy bits of baked on cheese are completely irresistible! Great as a side dish but also a strong option for a main course (think Meatless Monday) paired with a salad.

Smashed Potatoes
Serves: 4
  • 1 pkg (4 oz/113.4 g) Idahoan® Baby Reds® Flavored Mashed Potatoes
  • 125 mL (1/2 cup) chopped green onions
  • 125 mL (1 cup) shredded Cheddar cheese
  1. Preheat oven to 400°F (200ºC). Prepare Baby Reds® Flavored Mashed Potatoes following package instructions.
  2. Set cast iron skillet over medium heat; coat well with nonstick cooking spray. Scoop potatoes into 4 mounds in skillet. Top with green onions and cheese.
  3. Cook for about 5 minutes or until crisp and set on the bottom. Transfer to oven; cook for 10 to 15 minutes or until cheese is melted.
  4. Tip: Serve the potatoes on their own or as a side with meatloaf, steak or chicken. This recipe is delicious with any variety of Idahoan Mashed Potatoes – so experiment with different flavors and even different cheeses to find your favorite!
